Pumpkin and Sweet Potato Fritters

  • 1 cup grated raw pumpkin
  • ½ cup crushed sweet potato
  • 1 cup flour
  • ¼ cup sugar
  • ½ teaspoon spice
  • ½ teaspoon baking powder
  • 2 teaspoons melted shortening
  • ¼ teaspoon salt
  • Milk to mix
  • Fat for frying

Sift flour, salt and baking powder. Add sugar, spice, crushed vegetables and shortening. Blend in milk to make a batter. Fry by spoonfuls in hot fat. Drain and serve hot.

This bi-annual festival and street parade is held on Boxing Day (the day after Christmas) and New Year’s morning. Some say this has been going on for 200 years or more. Bahamas.com records: “Though the exact origin of the festival is unknown, there are plenty of theories. Many believe it was established by John Canoe, a legendary West African Prince, who outwitted the English and became a local hero. The most popular belief, however, is that it evolved from the days of slavery.” Whatever the reason for its start, it is undoubtedly a can’t-miss if you are in the Bahamas at Christmas time!
